Step inside Sublimotion Dubai: A bucket-list-worthy dining experience

The brainchild of chef Panco Roncero (who is also behind the Michelin-starred Paco Roncero Restaurante in Madrid) and co-founder Eduarde Gonzales (Vega Factory), Sublimotion first opened in Ibiza in 2014. A highly coveted gastronomic experience, Sublimotion Dubai marks the concept’s first pop-up outside of the original. Totally unique and immersive, this bucket-list-worthy dinner seats 12 guests at a time and runs twice daily at the opulent Mandarin Oriental hotel.

Priced at 5000AED per ticket, the 2-hour-long extraordinary culinary show features 13 sumptuous courses with the finest ingredients, immersive experiences, drinks (alcohol included), and entertainment.

A high-tech, visually stimulating affair, the experience features 360-degree screens and imagery projected onto every surface, from the walls to the table. The dining room quite literally turns into a stage, the staff to entertainers, and all you need to do is sit back, relax and enjoy the rollercoaster of a show.

The HUNTR’s spectacular Sublimotion evening kicked off with the Welcome Experience in The Library. Done in a classic, nostalgia-inducing style, the cosy library area encompasses comfy leather seats and a vintage feel. We were welcomed with a striking, colour-changing drink, which was paired with 3 divine bites – a sour cream fritter with Russian Oscietra caviar, a spiced squab cream with beetroot puree, and an oyster with black garlic and apple pearls. Everything was delicious, easy to eat with your hands, and the perfect size to get the appetite going for what was to come.

Next, it was showtime, and we made our way to the main dining room, which features a large central table to seat 12 and a jaw-dropping array of surprises. We are reluctant to give too much away, because a lot of the joy came from not knowing what to expect next and the sheer amazement of it all, which could be easily ruined by oversharing. Suffice to say it was utterly spectacular and something we will remember for the rest of our lives. Each of the 10 courses served in this room features a different stage/theme/show. The food is faultless, and beautifully and creatively presented. This is a once in a lifetime opportunity and if you can afford it, we say run, don’t walk and book your tickets now – technically speaking the price includes a flight to Thailand so it’s not too bad after all (wink)…

Insider tips: Advanced bookings essential. Allergies and dietary requirements are catered to, but you must share them at the time of booking. There are two shows daily at 6.30pm and 9pm.
